Taco Meat Recipe

This is my mom’s recipe, she always made it when I was growing up. No matter where I go, no restaurant can rival the flavor.

Ingredients:

  • 1lb ground beef
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1/4 c diced green chiles
  • 1/3 c crushed tomatoes
  • 1 1/2 tsp chili powder
  • 1 tsp dried crushed oregano
  • 1 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1/8 tsp black pepper

My substitutions/suggestions:

Instead of fresh garlic, I use 1/2 tsp of old world minced garlic in water.  Also,  I use one can of rotel diced tomatoes and green chiles instead of buying green chiles and tomatoes separately.  Also, if you’re cooking for a larger group, multiply the recipe.  My mom always cooked five pounds of meat for the six of us so we’d have leftover taco meat for the next night.

Method

Brown ground beef over medium heat and drain well.  Once drained, add chopped onions, tomatoes and chiles.  Return to heat, but reduce temperature slightly.  Add salt, pepper, garlic, chili powder, oregano, and cumin.  Stir until appearance is uniform.  Continue cooking on medium low heat until onions are translucent.  Once the onions are done, you are are ready to eat!  Serve in tacos, burritos, tostadas, nachos, quesadillas, taquitos, or whatever you want it in.  Garnish with guacamole, sour cream, shredded cheese, lettuce, tomatoes, jalapenos, olives, or whatever your favorites are.
