In Ancient Rome, the word testis in Latin referred to “witness” because in those old great days of Pax Romana, when a man was testifying in court, he would put one of his hands up in the air while the other would be placed on the testis! All this was done to emphasis the male conquest of the world, including areas of truth and Justice.

Talking about the Man Barbeque, the only logical thing to bring to a Man Barbeque is some part of a male and  the testis as a recipe is one such item common at most Man Barbeque joints around the world. In Africa for example, many societies eat male animals whole-even the testes are not thrown away. Grilled testes is therefore, very popular with a number of men. Below are just a few forms of Testes that are often grilled on big  ocassions;

Duck testes

 This takes the shape and size of a kumquat and those who enjoy it say they are more tender and pleasantly flavored than those of the other animals such as lamb or bulls. Those experienced in the cooking of duck testes say whereas lamb testes smell of grass and taste like offal, the duck testes present with a uniquely delightful flavor. Their  succulent scallops make them even more appetizing especially when grilled.

Lamb Testes 

Unlike duck testes, lamb testes have many culinary virtues. Firstly, Lamb testes are quick to cook but quite resistant to over cooking. It cooks within a short time but should you continue boiling it in strong heat, it does not get too soft, instead, they remain tender in an extended time of cooking.  There are two popular ways of cooking lamb testes; you can either grill the lamb testes if you are more concerned with flavor and retaining the testes in the whole shape or you could choose to batter the balls in egg and panko crumbs and then deep-fry  into oysters.  

 Since Man Barbeques are normally very popular, if  there many revellers around, giving every guest a half lamb testis would be very satisfying, but where there are not so many guests to serve, one whole lamb testis and a half would be the ideal quantity on a plate.
