Tomato-Meatballs Express

If you drink fresh tomato juice and you don’t wish to throw away the pulp, this is how to make use of it.

This is just an accidental recipe that caught my creativity when there were plenty of tomatoes on sale at the grocery. Having experimented on a combination of fruit and vegetable juice for months to loss weight, I have thought about feeding the tomatoes on my juicer for source of fresh tomato juice. After the juicer did its job, I felt it would be such a waste throwing away the squeezed pulp so I decided to mixed it up with some stuffs on the fridge and a pack of meatballs seemed appropriate.

To make the story short, the taste was extraordinary and a fitting shift from the usual common dish available. The reason that I placed ‘express’ to add to the name of this dish was mainly brought by the fact that I added green chilli peppers (jalapeno) to spice up the taste. Philippine dish which originates from Bicol province characterized by a lot of red chilli pepper ingredients making them both saucy and hot were called ‘Bicol Express’. So I have this dish named Tomato-Meatballs Express for a little taste of home.  

Ingredients

  • Tomato pulp (taken from the juicer waste bin) / 10 pcs medium sized tomatoes sliced to bits (don’t include the innards with the seeds)
  • Meatballs -350 gms (slice each balls to bits)
  • 1/2 tsp salt (depends on your preference)
  • 4 pcs green chilli peppers (jalapeno) sliced to bits
  • 1 medium sized onion
  • 2 small parts of garlic diced
  • 3 tbsp vegetable oil
  • 2 eggs (beaten)

Method

  1. Allow the frying pan to heat up in medium heat, place 2 tbsp cooking and fry the bits of meatballs for about  2-3 minutes then set aside.
  2. In the same frying pan, add the remaining 1 tbsp cooking oil and sautee the garlic and onion until the onion looks transparent, mix the tomato pulp and the green chilli peppers for 3-4 minutes.
  3. Add the bits of meatballs and mix up all the ingredients evenly for 2 minutes.
  4. Pour the egg mixture evenly, allow to seep through the mixture then turn aside, scatter the mixture in the pan to mix up well. Note that the mixture is soft enoughed to be tumbled down as a whole. This is not a pizza and there is no crust so give up trying. When the egg mixture is evenly combined and cooked (3-4 minutes will do), set aside and serve.

    Sounds delectible, my friends mother , very italian, would always add a bit of her homemade sauce to her meatball recipe and it was fantastic, she also would use like a meatloaf mix-ground beef, pork, and veal…..I’ve been given her recipe many times but still can’t re-create her awesome meatballs, nice piece and informative….good stuff here!
