Turkey Nachos

Turkey Nachos are a nice healthy spin on traditional nachos. This recipe serves six. It has 421 calories per serving, without adding any of the ingredients under the tip section.

Ingredient

  • 1 finely chopped onion
  • 2 tsp of canola oil
  • 1 clove of garlic
  • 1 tsp chili powder
  • Salt
  • ¼ tsp red pepper
  • ½ tsp cumin
  • 8 oz lean ground turkey breast
  • 1 bag of baked tortilla chips
  • 1 can of black beans (washed and drained)
  • 8 oz shredded pepper jack cheese
  • 1 cup of cherry tomatoes (quartered)
  • 1 small avocado diced
  • ¼ cup chopped green onion

Method

  1. Preheat oven to 400 degrees.
  2. Warm oil in heavy skillet over medium heat.
  3. Add turkey meat, onion, garlic, chili powder, cumin, red pepper, salt, and pepper to oil.
  4. Cook 7-10 minutes or until turkey is thoroughly cooked.
  5. Spread ½ of the tortilla chips in the bottom of a 9×13 baking dish.
  6. Spoon ½ turkey mixture over the chips.
  7. Spoon ½ of the beans over turkey mixture.
  8. Sprinkle ½ of the tomatoes over the beans.
  9. Cover with ½ of the cheese.
  10. Repeat the layers one more time.
  11. Bake uncovered for 10 minutes or until cheese is melted.
  12. Garnish with the avocado and green onions.

Tips:

Other great topping or garnishments are: lemon or lime wedges, shredded lettuce, jalapenos, sour cream, and or extra shredded cheese.

If you do not like turkey, just substitute with lean ground round or shredded chicken.

    Sounds great…Turkey is lower in fat than beef, so a healthier choice.
