With Thanksgiving over comes lots of leftover turkey(duck or chicken). Sandwiches get old so what does one do with all that leftover turkey? Here are some ideas from my family to yours.

Thanksgiving is over and the icebox is full of leftover turkey.  The dilemma of what to do with all that turkey begins.  Here are some recipe ideas.

1.     Quesadilla

Take 1 tortilla shell and fill it with turkey, stuffing, and your choice of veggies (peas, carrots, potatoes…) and a little cheese.  Place another tortilla shell on top and pinch closed.  Bake at 350 degrees for 15- 20 minutes.

2.     Turkey Salad on a bun

Dice up some turkey and mix with mayo.  Add onions, celery, tomatoes, etc…   Serve on a bun.

3.     Salad

Dice turkey and add to lettuce, diced tomatoes, diced carrots, peas and shredded cheese.  Serve as a salad.  Great lunch!

4.     Casserole

Boil rice in chicken broth.  Add veggies of choice and turkey.  Bake until warm.  Serve.  Alternative:  use noodles instead of rice, add cream of chicken or cream of mushroom soup in place of the broth.

5.     Omelet

Dice turkey and add to egg with tomatoes, onions, peppers, etc…

Serve omelet with garlic bread.  Makes a good lunch or dinner too.

These recipes are good for any poultry leftovers including duck and chicken.  Enjoy!
