  • 1 Onion
  • 1 Garlic Clove
  • 1 Egg Yolk
  • 4 Tablespoons of Fruity Pickle or Chutney

  • 1 Teaspoon of Olive Oil (for brushing)

Method:

  1. Peel and finely chop the onion
  2. Peel and crush the garlic
  3. Cut bacon in half crossways
  4. Cut hamburger buns in half but leave a small section uncut to act like a hinge
  5. In a large mixing bowl, combine the veal mince, the finely chopped ham, the brown breadcrumbs, the egg yolk, the crushed garlic and the finely chopped onion
  6. Season to taste with some freshly ground black pepper and freshly ground salt and mix well
  7. Divide the burger mixture into 8 roughly equal portions
  8. Shape each portion into uniform rounds (9cm in diameter) and flatten slightly
  9. Top 4 of the rounds with a tablespoon of fruity pickle or chutney
  10. Set the remaining burger rounds on top and press together around the edges to seal in the pickles/chutney
  11. Reshape the assembled burger and chutney rounds into burgers that are 9cm in diameter and about 2cm thick
  12. Wrap one half slice of bacon around each of the veal and ham pickle burgers and lightly brush each, on all sides, with olive oil
  13. Pan-fry, grill or barbeque on a high temperature setting, with the bacon join underneath, for 10-12 minutes or until golden, turning once
  14. While the burgers are cooking toast the hamburger buns
  15. When the burgers and the buns are ready simply assemble your veal and ham pickle burgers and enjoy
