Yellow Plantain Canoes

This is a simple recipe for anyone who likes yellow plantains and meat.

Canoes

Ingredients

  • 4 yellow plantains
  • 1lb. of ground meat previously cooked
  • 3 slices of American cheese
  • Vegetable oil (the amount will depend on the skillet you decide yo use)

Method

  1. Peel the yellow plantains. Make sure that they are ripe. It is better if on the outside, they look yellow and a little bit black.
  2. With a knife open the plantains. You should make this  small opening from left to right. Think that the plantains are canoes and the opening you are making is where people will sit in the canoe.
  3. Fried the plantains in a deep skillet, until they turn soft. You can use vegetable oil.
  4. Take the plantains out of the oil and put them on a plate with a napkin. In this way the napkin will absorb the oil.
  5. Put the plantain on a different plate and stuffed each one with the ground meat that you already prepared.
  6. Cut the cheese on small slices and cover the ground meat with it.
  7. Put the the plate with the four plantains in the microwave oven for thirty seconds, or until the cheese melts.

You can enjoy this dish, with a lettuce and tomato salad or with white rice and red beans. It’s delicious.
