Zesty Pork Chops with Butter Bean Mash

PREPARATION TIME: 10 MINUTES, PLUS INFUSING COOKING TIME: 15 MINUTES SERVES 4

zest and juice, 1 lemon

2tbsp chopped fresh rosemary leaves

4 pork chops, trimmed of fat

700g (11b 9oz) potatoes, peeled and quartered

1 x 400g tin butter beans, drained and rinsed

1tbsp sun-dried tomato puree

Heat the grill to medium-high. Mix together the lemon zest and juice with the rosemary, pour over the pork and leave for 10 minutes to infuse. Season and place under the grill for 15 minutes until cooked, turning once and spooning over more marinade.

2 Meanwhile, bring a pan of salted water to the boil, add the potatoes and cook for 10 minutes. Stir in the beans and cook for

3 minutes longer. Drain, mash together with the tomato puree and 50ml (2fl oz) of cooking water, then serve with the pork, some steamed green beans or mangetout.

Per serving: 380 calories, 7g fat (2g saturated), 42g carbohydrate
