Zucchini and Ham Slam

Two main ingredients and some spices, that’s all you need to make this delight!

Easy, Simple, and Healthy all describe the Zucchini Ham Slam.  It’s really just zucchini that’s been sauteed with some reheated, precooked, honey baked ham.  I lucked out an found an 8lb ham at Trader Joe’s for $8, so I have A LOT of ham.  I never thought to try these two ingredients together, and in such a simple dish they really compliment each other well.

INGREDIENTS:

  • Some Honey Baked Ham Roughly Ripped into various sizes
  • 2 Zucchinis sliced about 1/4 inch thick
  • 2 tsp Salt
  • 2 tsp Pepper
  • 2 tsp Onion Powder
  • 1 tbsp Olive Oil
  • 1/2-1 tsp Apple Cider Vinegar

RECIPE:

  • I did this in a sauce pot over medium high heat
  • Add the oil
  • Add the Zucchini and saute for about 4-5 minutes stirring occasionally
  • Add the Ham chunks, stir
  • Cook another 2-3 minutes or until ham is warmed through
  • Add the vinegar, and stir
  • Serve!
