Baked Macaroni and Cheese

Ingredients

  • 8oz Macaroni
  • 4oz Butter
  • 2 Spring Onions (Finely Sliced)
  • 2 Tablespoons Plain Flour
  • 8fl oz Evaporated Milk
  • 8fl oz Single Cream
  • 2 Tablespoons Mayonnaise
  • 10oz Cheddar Cheese (Grated)
  • 2 eggs (Lightly Beaten)
  • 4oz Parmesan Cheese (Freshly Grated)

Method

Bring a large saucepan with salted water to a boil. Carefully pour the macaroni into the boiling water, and cook for about 10 minutes or until soft. Do not overcook the macaroni! Remove the macaroni from the heat, drain the water from the macaroni and set aside.

In a frying pan, melt the butter and saute the spring onions over, medium heat, until there soft. Then add the flour and mix well until it is dissolved. Continue to saute for about 3 minutes, then blend in the evaporated milk, the cream, and then the mayonnaise. Finally, add the Cheddar cheese to the sauce.

Preheat the oven to 350°. Stir in the beaten eggs into the macaroni until evenly combined. Then mix the macaroni with the prepared, cheese sauce, and pour into a greased casserole dish. Sprinkle the top with the Parmesan cheese, and bake in the oven for 20–30 minutes. Or until the top of the casserole is golden brown and the macaroni is hot. Turn off the heat and allow the macaroni cheese to cool an serve warm.
