Fettuccine with Mushrooms and Chillies

This article is about a recipe of fettuccine with mushroom and chillies.

duration: 25 minutes

serves: 4 person

ingredients:

1) 2 tbsps extra virgin olive oil

2) 500g button mushrooms, sliced thinly

3) 2 large red chillies, sliced

4) 1 clove garlic, crushed

5) 500g fettuccine pasta

6) 80ml extra virgin olive oil, extra

7) 100g baby spinach leaves

8) salt to taste

how to cook?

step 1: heat oil in large frying pan over a medium fire. cook mushrooms, stirring for about 10 mins or until just tender and browned. add chillies and garlic, stirring until fragrant.

step 2: meanwhile, cook pasta in a large pan of boiling, salted water, uncovered until just right. reserve 80ml of liquid then drain pasta well.

step 3: combine hot pasta in a large bowl with extra oil, mushroom mixture, spinach and reserved cooking liquid. add salt to taste. toss gently to combine.
