Flannery’s Yummy Vegetarian Pasta

My favorite pasta dish!

Ingredients

  • 1 package penne pasta
  • 1 crushed garlic clove OR 1 tablespoon minced garlic
  • 1/2  cut pine nuts
  • 1/2 cup kalamata olives
  • 2 tablespoons olive oil
  • 1 package feta cheese (crumbled or block)

Preparation

  1. Boil pasta for 11-13 minutes, add a dash of olive oil to keep it from sticking.
  2. Chop feta cheese (if in a block).
  3. Drain pasta, add olive oil, garlic, and pine nuts.  Stir
  4. Wait 10 minutes for pasta to cool further, then add feta and kalamata olives.

And you’re done!

If you’re not vegetarian, you can also add 1 chopped and sauteed chicken breast.  I recommend using a bit of olive oil and garlic or garlic salt which sauteeing to bring out flavor.
