Garden Fresh Spaghetti

A healthier alternative to the usual tomato spaghetti sauce. Pick the ingredients straight from your garden, if possible.

Ingredients

 

  • 2 tablespoons olive oil
  • 1 cup sliced mushrooms
  • 1/4 cup chives
  • 2-3 bell peppers, at least two different colors
  • 5-6 large tomatoes
  • 1/4 cup spaghetti sauce
  • 8 ounces spaghetti

Method

  1. Chop vegetables into bite-size chunks.
  2. Heat oil in large skillet over medium heat.
  3. Add mushrooms, chives, and peppers to skillet and cook until tender-crisp.
  4. Add tomatoes and sauce and cook for 1-2 minutes more, just enough to warm the tomatoes.
  5. Spoon vegetables over each individual dish of spaghetti.
