Garden Fresh Spaghetti
A healthier alternative to the usual tomato spaghetti sauce. Pick the ingredients straight from your garden, if possible.
Ingredients
- 2 tablespoons olive oil
- 1 cup sliced mushrooms
- 1/4 cup chives
- 2-3 bell peppers, at least two different colors
- 5-6 large tomatoes
- 1/4 cup spaghetti sauce
- 8 ounces spaghetti
Method
- Chop vegetables into bite-size chunks.
- Heat oil in large skillet over medium heat.
- Add mushrooms, chives, and peppers to skillet and cook until tender-crisp.
- Add tomatoes and sauce and cook for 1-2 minutes more, just enough to warm the tomatoes.
- Spoon vegetables over each individual dish of spaghetti.
