Homemade Noodles

An old fashioned favorite family recipe.

Ingredients

  • 1 cup flour
  • 2 tablespoons milk
  • 1 egg, plus 1 yoke
  • 1/2 teaspoon salt
  • 2 quarts chicken broth

Preparation

Roll out on a floured surface. Let set for five minutes. Flour surface of dough and roll up jelly roll fashion. Cut into narrow strips, run fingers through noodles to loosen. Place into boiling broth, cook for 30 minutes. Add diced chicken if desired.

The noodles may also be dried for later use, by laying them on a cookie sheet that has been lined with a cooling rack, dry for two hours.
