Italian Dosa
Well this is a very simple dish that me and mom had come up with. Its very simple and easy to make. A little bit of preparation is required a day before hand. Its really a tasty treat and can be served as something for breakfast even as a starter to a meal. Its very light and healthy for you.

Well basically the Italian Dosa consists of 2 parts, mainly the base (the dosa) and the filling (a sauce). A dosa is basically an Indian version of the crepe made using a batter of ground rice and black lentils.
Ingredients for Dosa:
- 3 Cups of Rice
- 1 Cup of Urad Dal ( black lentils)
- A tablespoon of oil for cooking the dosa
- Salt to taste.
Ingredients for Sauce
- Bottle of Brillia Basilico pasta sauce
- 8-9 Button mushrooms
For the dosa you need 1 cup of rice and 1/2 cup of black lentils. It may vary depending on how many days or how many people you are going to feed. This would be enough for 2-3 people. Soak the rice and black lentils separately in water. Once soft, strain the rice and lentils until most of the water is lost be sure to leave it a bit moist or the batter will be thick and coarse. Grind both of them in a mixer or a blender until you get a semi thick batter making sure there are no lumps. You can stir the the batter till it reaches a smooth consistency if not already. Leave the batter covered in a cool place over night. Well this is the only preparation you need before hand.
Now for the filling. I use a pasta sauce bought directly from the store. You can make your own pasta sauce to which ever way you like. I use Brillia Basilico pasta sauce which is nice and simple. Heat the sauce (I use 1 whole bottle) in the pan and add 8-9 chopped button mushrooms cook just until the mushrooms are done. Keep aside until you need to fill the dosa.
Now to make the dosa. For this you require the batter we had put aside for fermentation. Give the batter a few good stirs. Heat a large flat pan ( size of pan depends on the size of the dosa). Add a slight amount of oil and spread it on the pan. Take only one ladle full of the batter and pour into the center of the pan. Now slowly with the ladle spread the batter in concentric circles till the you reach the edge. Cook for about 1-2 minutes and flip over and cook the other side for just 30-50 seconds. Now take it off the stove. Time to assemble now. First lay the dosa flat on the plate then spread the sauce onto the whole dosa giving it a thin-medium layer. Now you can either roll it and dig in or fold it like a napkin. I prefer the rolled up version. Eat them while they are still warm because none likes a hard dosa.
