Lasagna

1 pound lasagna noodles
2 eggs, beaten
3 cups small curd cottage cheese
1/4 cup grated parmesan cheese
1/2 recipe spaghetti sauce
2 tablespoons dried parsley flakes
1 to 1 1/2 pounds grated mozzarella cheese
Cook lasagna noodles according to package directions. Drain and rinse. In bowl combine eggs, cottage cheese, parsley flakes and parmesan cheese. Lightly spray a 9×13 inch pan wiith PAM. Spoon small amount of sauce on bottom of pan. Cover with 1/3 of noodles, then 1/3 of sauce, 1/3 of cottage cheese mixture and 1/3 of mozzarella. Repeat again, then put on remainder of noodles. Push down slightly on last layer of noodles to firm up layers. Then continue with sauce, cottage chees and mozzarella. Can make to this point and be covered and refrigerated until ready to bake. Bake, uncovered in 375 degree to 400 degree oven for 45 minutes to 1 hour. If cheese starts to get too browned, cover loosely with foil. Remove from oven and let stand covered for 15 minutes before cutting into squares. Serves 10 to 12. Depends on how cheesy you like it as to the amount of mozzarella cheese to use.
