Linguine Alla Checca
Not many people have heard of this pasta dish, whose sauce requires no cooking at all.
Having shared some of my life with a part time vegetarian, part time vegan, I had to become quite versatile in the art of vegetarian and vegan cooking. Not the easiest of challenges, especially for a romantic dinner for two. Until I found this little know pasta sauce recipe. Best of all, it requires no cooking, just steeping at room temperature.
Ingredients
- ½ lb. Vine Tomatoes, Skinned, De-seeded and Chopped
- 1½ lb. Ripe Plum Tomatoes, Skinned, De-seeded and Chopped
- 2 Cloves of Garlic, Minced
- ¼ Cup Capers
- ¾ Cup Kalamata Olives, Pitted and Halved
- 3 tbls Extra Virgin Olive Oil
- Leaves of 2 Stalks of Basil, Bruised
- 1 Pinch Sugar
- Salt and Black Pepper to Taste
- Linguine or Other Pasta for 2
Method
Simply mix all the ingredients together in a large bowl, cover with cling film, put a few fork holes in the cover and leave to steep at room temperature for 3-4 hours. The, when ready, cook the pasta until al dente, toss in the sauce and serve.
You can leave the mixture steeping for up to 10 hours, so you could prepare the sauce in the morning before work and come home to a no fuss dinner for two.
