Linguine with Prawns and Lemon

duration: 35 minutes

serves: 4 person

ingredients:

1) 375g linguine

2) 2 tbsps extra virgin olive oil

3) 1kg medium-sized prawns, shelled, halved lengthways and deveined (buy tiger or grey prawns)

4) 2 cloves garlic, crushed

5) 180g frozen peas

6) 2 tbsp finely grated lemon rind

7) 6 medium-size onions, sliced thinly

8) 1 tbsp coarsely chopped fresg dill

9) 2 tbsp lemon juice

10) 60ml extra virgin olive oil, extra

11) salt and freshly ground black pepper

how to cook?

step 1: cook pasta, uncovered in boiling, salted water until just right. drain and set aside.cover to keep warm

step 2: menawhile, heat oil in a large frying pan. cook prawns and garlic in batches, until prawns turn pink about 5 mins. remove and keep warm

step 3: add frozen peas to same pan. cook,stirring until heated through. add grated lemon rind, onions and fresh dill. cook for about 2 mins, stirring until peas are tender. return prawns to pan with lemon juices; stirr to mix well for another 2 mins or until hot

step 4: combine prawn mixture with hot pasta and extra oil. toss well. season with salt and pepper to taste.
