Macaroni & Cheese

I love to experiment using different cheese. I find that softer cheese is the best.

Spray casserole pan with nonstick for about 16 ounce cooked macaroni and cheese mixture.

Boil 16 ounce dry macaroni in boiling water for 8 to 10 minutes.

Melt one stick of butter on medium heat in a good sized sauce pan.

Add about 7 tbsp of flour until thick and blended.  Watch your heat.

Take 3 1/2 cups of milk pour in and stir constantly until thickened.

Add 1/2 tsp of salt

Add 1/2 tsp of pepper

Take two 8 ounce bricks of Monteray Jack/Colbe cheese blend and shred or cut up small pieces.

Add to the milk/flour mixture and stir until melted.

Layer the macaroni and the cheese mixture in your greased pan.

Sprinkle the top with paprika.

Heat your oven for 350 degrees and cook until bubbly or about 20 to 30 minutes depending on how deep the pan.

NOTE:  You can use your favorite cheese that goes well in macaroni and cheese.

NOTE:  You can use your favorite breadcrumbs (Panko) you might want to flavor them with a little salt or other spice for a topping.  Crumbled Potato chips are good to.  Put handful in a baggy and pound it and throw on top. Enjoy!

NOTE:  You can also use a 9 X 13 pan for faster cooking time.

NOTE:  Some people like to eat macaroni and cheese with a little dish of stewed tomatoes.

NOTE:  This recipe can also be cut in half for 8 ounces of macaroni for smaller portion.
