Pasta and Bacon

published by Jonathan Pickard on Mar 12, 2007

A simple meal that is quick and easy to make

Ingredients

  • 1 tablespoon of olive oil
  • 8 rashes of smoked bacon cut into pieces
  • 2 beaten eggs
  • 4oz diced cheese
  • 4oz sliced mushrooms
  • 250g pasta

Heat the olive oil in a frying pan, on a medium heat and throw in the bacon pieces. Fry until the bacon is crispy. Remove the bacon with tongs and keep warm.

Cook the pasta in plenty of salted water and drain.

Fry the mushrooms in the bacon dripping for about 5 minutes then remove from the heat.

Stir the mushrooms, cheese and eggs all into the pasta until the cheese has melted and the beaten eggs have covered the pasta.

Plate up and sprinkle the bacon on top to finish off a delicious dish.
