Ravioli with Cheese and Herbs

Delicious!

This meal is simple and delicious. It was passed down from my grandma, who passed away 2 years ago. I hope to share this recipe with everyone! I hope you like it when it’s done. This recipe serves 4-6 people…

Ingredients

  • 1 cup of full-fat cream cheese (softened)
  • 1 finely chopped garlic clove
  • 1 ounce of mixed herbs (you can use thyme, basil, chives, and parsley – finely chopped)
  • 1 quantity of fresh pasta dough, rolled by machine into 2 x 12-inch strips, or divided into 4 and rolled by hand as thinly as possible
  • semolina (to coat)
  • 1/2 cup butter
  • salt
  • ground black pepper

Method

  1. Mix the cream cheese, garlic, and most of the herbs together. Season this with salt and pepper.
  2. Make the ravioli, filling them with the cheese and herb mixture. Toss the ravioli in a little semolina to coat it lightly and let is rest at room temperature for about 15 minutes.
  3. Bring a large pan of salted water to a boil. Drop in the ravioli and cook it for 7-9 minutes or until they are just tender to the bit. Drain them well.
  4. Melt the butter. Toss the ravioli in the melted butter. Sprinkle this with the remaining herbs and serve it immediately. Enjoy!
