Simple Noodles with Ginger and Coriander

This is a simple and easy-to-make noodle dish.
Serves 2-3.

Ingredients

  • 250 egg noodles(cooked as per packet instructions)
  • 1 tbsp of ginger(chopped finely)
  • 6 spring onions(chopped)
  • 3 tbsps of fresh coriander(chopped)
  • 1 1/2 tbsp light soy sauce
  • salt to taste
  • 1 tsp black pepper
  • 2 tbsp olive oil

Method

  1. Heat 1 tbsp oil in  a wok and toss noodles into it. remove after a minute or two.
  2. Add the remaining 1 tbsp of oil in the same wok and saute’ ginger for a few seconds. Then add in the chopped spring onions. Mix a little and then add the noodles.
  3. Stir fry on high heat of not more than a minute and flavor them with salt,black pepper and soy sauce. Toss well.
  4. Top with coriander leaves and mix well.
  5. Dish out and serve immediately and serve hot.
