Simple Noodles with Ginger and Coriander
This is a simple and easy-to-make noodle dish.
Serves 2-3.
Ingredients
- 250 egg noodles(cooked as per packet instructions)
- 1 tbsp of ginger(chopped finely)
- 6 spring onions(chopped)
- 3 tbsps of fresh coriander(chopped)
- 1 1/2 tbsp light soy sauce
- salt to taste
- 1 tsp black pepper
- 2 tbsp olive oil
Method
- Heat 1 tbsp oil in a wok and toss noodles into it. remove after a minute or two.
- Add the remaining 1 tbsp of oil in the same wok and saute’ ginger for a few seconds. Then add in the chopped spring onions. Mix a little and then add the noodles.
- Stir fry on high heat of not more than a minute and flavor them with salt,black pepper and soy sauce. Toss well.
- Top with coriander leaves and mix well.
- Dish out and serve immediately and serve hot.
