Southwestern Chicken Pasta

A very simple, but delicious recipe–everyone asks for it–I made it up.
Ingredients
- 1 16 oz. pkg. of angel hair pasta
- 1 can of Rotel Diced Tomatoes & green chilies
- 1 16 oz. pkg. of Velveeta cheese, cubed
- 3 cloves of garlic, chopped
- 4-5 cooked boneless chicken breasts, chopped
Method
- Cook the angel hair pasta according to package directions, drain and let cool.
- Place the cooled pasta in a 13 by 9 pan. Ina microwaveable dish, place the cubed
- Veleveeta chunks, the chopped garlic and the Rotel. Microwave for a minute and stir the
- contents until all is blended. Put the chopped chicken over the pasta and pour the Rotel
- Velveeta mixture over this. Serve warm. This will feed 10-12 people.
