Southwestern Chicken Pasta

A very simple, but delicious recipe–everyone asks for it–I made it up.

Ingredients

  • 1 16 oz. pkg. of angel hair pasta
  • 1 can of Rotel Diced Tomatoes & green chilies
  • 1 16 oz. pkg. of Velveeta cheese, cubed
  • 3 cloves of garlic, chopped
  • 4-5 cooked boneless chicken breasts, chopped

Method

  1. Cook the angel hair pasta according to package directions, drain and let cool.
  2. Place the cooled pasta in a 13 by 9 pan. Ina microwaveable dish, place the cubed
  3. Veleveeta chunks, the chopped garlic and the Rotel. Microwave for a minute and stir the
  4. contents until all is blended. Put the chopped chicken over the pasta and pour the Rotel
  5. Velveeta mixture over this. Serve warm. This will feed 10-12 people.

    Sounds great! I will try it. I love to cook and make up my own recipies.
