Sun Dried Tomato and Garlic Linguine

This recipe is perfect by itself, but it could also be used to accompany salmon or a grilled chicken breast.

Ingredients

  • 1 tsp of lemon zest
  • 1 ½ stick of softened unsalted butter
  • 1 lb linguine
  • 1/3 cup extra virgin olive oil
  • 3 cloves of finely chopped fresh garlic
  • ½ tsp of salt
  • ¼ cup of finely chopped flat leaf parsley
  • ¼ tsp crushed red pepper flakes
  • ½ -¾ cup of sun dried tomatoes.
  • ¼ cup of parmesan cheese

Method

  1. Cook pasta as package directs.
  2. In a sauce pan, heat: butter, lemon zest, olive oil, red pepper, salt, sun dried tomatoes, and garlic over low heat. Cover and simmer until garlic is tender- about 10 or 15 minutes.
  3. Add ¼ of the pasta water and flat leaf parsley to the sauce pan. Continue to simmer while you are draining pasta.
  4. Toss pasta and sauce.
  5. Sprinkle with parmesan cheese and serve.
