Sun Dried Tomato and Garlic Linguine
This recipe is perfect by itself, but it could also be used to accompany salmon or a grilled chicken breast.
Ingredients
- 1 tsp of lemon zest
- 1 ½ stick of softened unsalted butter
- 1 lb linguine
- 1/3 cup extra virgin olive oil
- 3 cloves of finely chopped fresh garlic
- ½ tsp of salt
- ¼ cup of finely chopped flat leaf parsley
- ¼ tsp crushed red pepper flakes
- ½ -¾ cup of sun dried tomatoes.
- ¼ cup of parmesan cheese
Method
- Cook pasta as package directs.
- In a sauce pan, heat: butter, lemon zest, olive oil, red pepper, salt, sun dried tomatoes, and garlic over low heat. Cover and simmer until garlic is tender- about 10 or 15 minutes.
- Add ¼ of the pasta water and flat leaf parsley to the sauce pan. Continue to simmer while you are draining pasta.
- Toss pasta and sauce.
- Sprinkle with parmesan cheese and serve.
