Very Easy Lasagna

An easy, fast and flavorful lasagna.

Ingredients

  • 1 package lasagna plates
  • 1 cup shredded cheddar mixed with mozzarella cheese.
  • ~16 oz cottage cheese
  • 2 Onions
  • 2 red pepper
  • 1 can stewed tomatoes
  • 1 small can tomato paste
  • 2 tsp oregano
  • 1 tsp basil
  • 1 tsp garlic (or 1 finely chopped clove)
  • Salt and pepper

Method

Place the top four lasagna plates in water. Fine chop the onions, stir-fry and add spinach. Dice the peppers and add them frying pan. Mix tomato paste and stewed tomatoes in a pan on medium heat. Add the spices.

Take the wet lasagna plates and cover them as a bottom layer. Add 1/3 of the tomato sauce, 1/3 cup cheese and add the second layer of lasagna plates on top of it.

On top of the second layer, add the onions, red pepped and spinach evenly on the lasagna plates. Spread 1/2 cup of cottage cheese on top of it, followed by 1/3 of the tomato sauce and 1/3 cheese.

Add another layer of lasagna plates and use the rest of tomato sauce and cottage cheese. Add the last layer of lasagna plates and put some shredded cheddar on top of it.

Put the lasagna in the middle of a preheated oven at 350°F (180°C) for about 30-40 minutes. Let it cool of ~10 minutes before serving.
