Whole Wheat Spaghetti with Wild Mushrooms

Gourmet cooking doesn’t always have to be high in calories to taste superb. Here is a healthy whole wheat main dish that you can serve to even your most calorie conscious friends and loved ones – spaghetti with wild mushrooms.
In order to make this dish you will first need to assemble the following ingredients; ½ pound whole wheat spaghetti or other whole wheat pasta, 1 tablespoon olive oil, 1 pound sliced cremini or shitake mushrooms, 2 cloves minced garlic, 1 teaspoon fresh minced rosemary, a pinch of crushed red pepper, 1 cup low fat reduced sodium beef broth, salt and black pepper to taste, and 3 tablespoons of freshly grated Parmesan cheese.
Once your ingredients are assembled it is time to get cooking. Start by preparing the spaghetti according to the package directions.
Next take a large heavy skillet, add olive oil and heat it over a medium high flame. One the skillet is nice and hot, add the mushrooms, garlic, rosemary, and crushed red pepper. Sauté those ingredients for about 5 minutes or until the mushrooms achieve a golden brown color.
Then add the beef broth, salt and pepper to the skillet. Let the mixture cook in the skillet until the volume is reduced by half. This will take approximately 2 to 3 minutes.
Once the mixture is at the desired volume drain your pasta and toss the spaghetti in with the mushroom sauce.
Plate the spaghetti, top it with the grated Parmesan cheese, serve and enjoy with a nice glass of vintage red wine.
