Preparing Delicious Rack of Lamb with Tasty Sides

Recipe on how to prepare Rack of Lamb with Twiced Stuffed Sweet Potatoes, and Brussel Sprouts with Bacon and White Wine.

Cooking is truly an art, I believe that any one can learn to cook it is just a matter of taking the time to learn.  Cooking seemed to come natural to me and it is always a pleasure for me to share my recipes with the public.  Today’s recipe that I will share is Rack of Lamb with Stuffed Sweet Potatoes and Brussels sprouts with Bacon bits and Butter.

Ingredients

You will need to purchase a Rack of Lamb from your grocery store or butcher.  Usually Rack of Lamb comes in portions of 6-8.  You can request a larger amount if needed.  Also, between 4-6 Sweet Potatoes, ½ Pound of fresh Brussel Sprouts, 1 Lemon, a small package of Regular Bacon. 

Method

First, take place Lamb on a cooking rack and season by adding some Salt, Pepper, garlic Powder, and Thyme.  I add about ½ cup of Red Wine by pouring over Lamb before placing in oven. 

Next Take Sweet Potatoes and place in 450-degree oven for 60 minutes.  Remove Potatoes after 60 minutes and allow cooling for about 10 minutes.  Slice Potatoes in 2 pieces and remove contents of Sweet Potato and place in large mixing bowl.  When you finish slicing Potatoes and removing contents in to bowl, you then want to add the following, ½ cup Milk, 1 Teaspoon Garlic Powder, 1 Teaspoon salt, 1 Teaspoon Black Pepper, ½ Cup of shredded Cheddar Cheese, 2 tablespoons of Grated Romano, you then want to beat contents with an electric mixer for about 2 minutes until all added ingredients are mixed well.  Take the leftover Potato skins and fill each one with generous amounts of sweet Potato mixture that you prepared, after completing filling all Potato skins, sprinkle with Paprika and place in oven at 400 for 15 minutes.

Next, take Brussel Sprouts and slice in half wash completely and place in strainer.  Prepare a skillet and set temperature at about 300, add ½ stick of Butter, ½ Cup of White Wine, 1 Tablespoon Garlic Powder, add Brussel Sprouts.  Next you want to take bacon and break in to small pieces and add to same Skillet as Brussel Sprouts, cook for about 15 minutes, add some Lemon and remove from skillet. 

Finally, the last thing you want to cook is the Lamb.  You only want to cook the Lamb for 12-15 minutes on Broil (no longer than that).  Lamb will be done medium rare, the best way to serve them.  If you overcook the Lamb becomes tough and looses taste. 

Place lamb on serving dish and serve with your Potatoes and Brussel Sprouts.  Enjoy!
