Puree of PEA Soup
Puree of pea soup is healthy recipe.
Ingredients:
1-½ cups split peas
1 tbsp special margarine
½ cup chopped onions
1 carrot, grated
2 leeks, sliced
1 tbsp salt
6 cups water
¼ tbsp white pepper
1 tbsp sugar
1 bay leaf
Procedure:
Wash the peas, cover with water, and bring to a boil. Drains add the 6 cups water, and bring to a boil. Cover and cook over low heat 1- ½ hours. While the peas are cooking, melt the margarine in a skillet; sauté the onions, carrot and leeks 10 minutes, stirring frequently. Add to the split peas with the salt, pepper, sugar and bay leaf. Cook 30 minutes longer or until peas are very tender. Discard bay leaf and puree in an electric blender or force through a sieve.
