Really Simple Sausage Cassoulet

A super-easy and super-cheap version of a rustic French dish, perfect for students on a budget!

Serves 3-4

Ingredients:

  • 1 tbsp oil
  • 1 onion, chopped
  • 2 cloves of garlic, chopped
  • 1 packet (6-8 rashers) of bacon, cut into strips
  • 6-8 sausages
  • 1 tin of chopped tomatoes
  • 1 can of baked beans
  • 1 carrot, diced
  • 2 sticks of celery, diced
  • 1 cup of water or stock
  • dried herbs, e.g. oregano, basil, parsley or thyme
  • 1-2 tbsp tomato ketchup
  • salt and pepper

1. In a large pan, heat the oil and fry the onion and garlic with the bacon and sausages, turning the sausages so they cook all over. The sausages can be halved first for convenience.

2. Once the sausages look mostly cooked, add the tin of tomatoes, carrot and celery, a sprinkling of herbs, and the water/stock. Mix well and leave to simmer for about 20 minutes.

3. Add the baked beans and ketchup, and stir together. Add salt and pepper to taste, and serve hot with bread, mashed potatoes or boiled rice.
