Another Valentine’s Dinner: Scampi and Spinach Salad
Here is a quick, light dinner for two – perfect for Valentine’s day or any day.
Ingredients
- 4 jumbo shrimp
- 4 sea scallops
- 2 Tbsp – fresh chopped onion
- 1 clove garlic, chopped
- ½ C sliced mushrooms
- ½ C water or white wine
- 1 tsp lemon juice
- ½ stick butter
- Salt and pepper
Method
- Peel and clean shrimp, split in half lengthwise. Slice scallops lengthwise.
- In a large saucepan, heat a little olive oil. Fry chopped onions and garlic for 1 minute. Add mushrooms for 2 minutes. Add 1 Tbsp flour and mix with fork until no lumps remain. Add wine and lemon juice and simmer until it starts to thicken, 1-2 minutes.
- Add seafood and cook for 3-5 minutes. Add butter; stir until it melts.
- Serve over rice; garnish with chopped parsley and a lemon wedge.
Serve with Spinach Salad
Wash and pat dry fresh spinach, or a mixture of spinach and salad greens. Arrange on salad plate. Top with avocado wedges around a cherry tomato or grape tomato. Add more tomatoes and almond slivers between the wedges. Sprinkle with basil or fresh mint. Serve with raspberry vinaigrette dressing, or vinegar and olive oil.
Add a bottle of white wine and hot rolls to complete the dinner.

Actually, yes! Forget the extra butter, add a little tarragon or rosemary and pepper.Or, forget the wine and lemon juice. Make it with orange juice and water. Add nutmeg and ginger. Mmmmm.
