Cajun Shrimp

If you love seafood like I do, you will love this recipe. It’s easy and healthy.

Ingredients

  • 1 cup slices fresh mushrooms
  • 6 green onions, sliced
  • 2 tablespoons of margarine
  • 1 medium tomato, chopped
  • 1/2 cup of cajun style bbq sauce
  • 1 tablespoon of lemon juice
  • 1/4 teaspoon salt
  • 1 pound of raw shelled and devained shrimp
  • hot cooked rice

Preparation

In a large skillet, saute mushrooms and green onions in butter 1 to 2 minutes. Add tomato, bbq sauce, lemon juice and salt; heat to boiling. Stir in shrimp. Simmer, uncovered, 4 to 5 minutes or until shirmp turn pink, stirring frequently, serve on rice.
