Chilli Prawn Croquettes

Freeze these after the rolling in the breadcrumbs and you always have a snack in hand.

 

Ingredients:

  • 1 cup prawns, peeled, deveined and minced 
  • ½ cup celery, chopped 
  • 1 egg, beaten
  • 3 table spoon butter
  • 3 table spoon flour
  • ¾ cup milk
  • 1 teaspoon chilli powder
  • ¾ cup breadcrumbs
  • Flour
  • Salt and pepper to taste
  • Oil for deep-frying.

Preparation:

  1. Melt butter.
  2. Add the flour and stir till smooth.
  3. Add milk and bring to the boil gradually.
  4. Stir to make sure no lumps form.
  5. Cook for about 3 minutes.
  6. Add the prawns, celery and seasoning.
  7. Chill in the refrigerator till firm.
  8. Divide the mixture into 12 pieces according to preference and shape into croquettes.
  9. Coat each piece with flour.
  10. Then dip in the egg followed by the breadcrumbs.
  11. Fry croquettes in hot oil till golden brown.
  12. Serve hot.
