Fried Oysters

A simple and fast change-up for preparing and serving oysters that will certainly make your efforts stand out from the average fare.

Oyster – Crassostrea Gigas

True oysters are members of the family Ostreidae (see below). Examples are the Belon oyster, eastern oyster, olympia oyster, Pacific oyster, Sydney rock oyster and the Wellfleet oyster.

You may need to adjust ingredient quantities to reflect the number of oysters that you intend to use for this recipe. Just scale up/down as required. Bottled oysters will obviously not require shucking but may still need bearding.

You will find the method we use for preparing fried oyster tortillas under the serving section.

Ingredients

  • Oysters
  • 1 Egg
  • 1 Tablespoon of Flour
  • Freshly Ground Black Pepper to Taste
  • Breadcrumbs
  • Oil for Cooking
  • 1 Lemon

Method

  1. Shuck and beard the oysters if necessary and drain thoroughly
  2. Mix flour and pepper then sift once. Place sifted flour mix into a saucer and spread it out a bit.
  3. Take another saucer, add in some dry breadcrumbs and spread them out as well
  4. Beat the egg and put it into a cup
  5. Cut lemon into wedges and place on serving platter
  6. Heat oil or fat in fry pan until smoking hot
  7. Dip oyster into flour/pepper mix coating it on all sides, then dunk it in the beaten egg and immediately transfer it to the breadcrumbs saucer. Stir it around and turn over to coat it in an even covering of breadcrumbs.
  8. You can prepare a batch of a few oysters and then use a slotted spoon to put them into the fry pan with the smoking hot cooking oil/fat. Begin preparing the next batch while this one is cooking.
  9. Once the crumbed oysters in the fry pan have turned a lovely golden brown color, use another slotted spoon to extract them from the hot oil and transfer to a paper towel covered wire rack to drain
  10. Begin cooking the next batch once all of the oysters from the previous batch are on the draining rack

Serving:

Serve fried oysters on serving platter with wedges of lemon and dipping sauces.

Sauce Ideas: A Tabasco/ketchup sauce is always a real crowd pleaser. You could also try mixing a little Worcestershire sauce with some ketchup.

Fried Oyster Tortillas: Another great way of serving these breadcrumb fried oysters is to spread some tomato salsa onto warmed tortillas, put on a row of fried oysters and then add some mayonnaise that has crushed garlic, minced onions and a little chili mixed in. Roll the tortillas and serve immediately. Enjoy!
