Jambalaya

A delicious crock-pot supper that will cook while you are away from home.

You can put this delicious crock-pot supper in the pot before you leave for work and it will be ready for the family meal when you get home. Serve with a salad and rolls.

Ingredients

  • 1 medium onion, finely chopped 1 green pepper, chopped
  • 2 ribs celery, thinly sliced 8 oz. turkey kielbasa, sliced
  • 1 can (28oz.) whole tomatoes 1 cup uncooked converted rice
  • 2 tsp. salt free Cajun Creole seasoning 12 oz. peeled large shrimp
  • Garnish; chopped parsley and hot pepper sauce

Method

  1. Layer onion, pepper, celery, kielbasa in a 31/2 qt.slow cooker.
  2. Mix tomatoes and their juices, rice, seasoning in a medium bowl, breaking up tomatoes with a spoon. Pour in slow cooker. Cover and cook on low 4 to 5 hours unless rice is tender. Stir in shrimp, cover and cook 20 minutes until cooked through. Sprinkle with parsley and hot sauce.

    It does sound delicious but, my husband wouldn’t eat it…there’s a veggie in it.

    Jambalaya is a mainstay here in New Orleans and throughout Louisiana. I did not know you could fix it in a crockpot.
    Sounds great. Will try it.
