Lent Recipe Number 3- Crabmeat Cakes

I hope you have enough time before Friday to gather the ingredients in this yummy non meat recipes.

1/2 tsp Worcestershire sauce

1 clove garlic peeled

3 Tablespoons butter

1 clove garlic, peeled

4 Tablespoons flour

1 cup milk

3/4 tsp salt

dash of pepper

3/4 cup dry bread crumbs1 2/3 cups flaked crabmeat

1 egg beaten

2 Tablespoon butter

1 hard cooked egg

Melt butter in saucepan with a clove of garlic sliced in several pieces. Remove pieces of garlic when the butter melts. Blend in the flour, and add the milk, stirring constantly until the sauce boils and thickens. Add salt, pepper, and Worcestershire, then remove fom heat. There should be 1 1/4 cup sauce. To 1/2 of the sauce add 1/4 cup bread crumbs and crab meat that has cartilage removed. Mix well, cover tightly and put in refrigerator  to chill. When thoroughly chilled shape the mixture into 10 small patties, then dip remaining patties in remaing , in the beaten eggs and again in crumbs. Pan fry in melted butter in a hot skillet  until each side is done on both sides, about 5 minutes. Serve hot with remaining white sauce which has been reheated with the hard chopped egg and thinned with about 1/4 cup milk.
