Light and Easy Seafood Chowder

This Chowder hearty, yet low in fat and calories. It`s just the dish to chase away chills on a cold day.

Ingredients

  • 1 tbsp butter or margarine
  • 1/3 cup chopped Onion
  • 1 tbsp Flour
  • 3cup Skim Milk (or half water/half milk will do)
  • 1 cup sliced Celery
  • 3/4 cups sliced Carrot
  • 1/8 – 1/4 cup finely diced Red Pepper (optional)
  • 2 cups cubed Potatoes
  • ½ – 1 tsp salt
  • Black Pepper
  • 3/4 lb fish fillets cut into large pieces . (Cod, Halibut, Haddock or any low fat fish)
  • 3/4 lb raw Shrimp
  • Chopped Parsley

Method

  1. Melt butter or margarine in a large pot and cook onion until tender
  2. Add flour : cook and stir until mixed
  3. Gradually add milk and bring to a slow boil
  4. Add celery, carrot and potatoes and seasonings and cook over low heat until veggies are tender
  5. Add cut up fillets, shrimp and peppers and cook for aprox. five minutes or until fish is tender enough to flake easily with a fork
  6. Serve steaming hot garnished with chopped Parsley

* If Chowder is too thick, it can be thinned a little with a bit of extra milk or water. Just remember to re-season.

    This looks interesting. Unfortunately, as you know, I have never been a seafood person. You definitely get your love of seafood from your dad.

    You won’t believe this but I’ve been waiting to get a receipe for Clam Chowder and this sounds delicious. First thing tomorrow, I’m trying it.
