Light and Easy Seafood Chowder

This Chowder hearty, yet low in fat and calories. It`s just the dish to chase away chills on a cold day.
Ingredients
- 1 tbsp butter or margarine
- 1/3 cup chopped Onion
- 1 tbsp Flour
- 3cup Skim Milk (or half water/half milk will do)
- 1 cup sliced Celery
- 3/4 cups sliced Carrot
- 1/8 – 1/4 cup finely diced Red Pepper (optional)
- 2 cups cubed Potatoes
- ½ – 1 tsp salt
- Black Pepper
- 3/4 lb fish fillets cut into large pieces . (Cod, Halibut, Haddock or any low fat fish)
- 3/4 lb raw Shrimp
- Chopped Parsley
Method
- Melt butter or margarine in a large pot and cook onion until tender
- Add flour : cook and stir until mixed
- Gradually add milk and bring to a slow boil
- Add celery, carrot and potatoes and seasonings and cook over low heat until veggies are tender
- Add cut up fillets, shrimp and peppers and cook for aprox. five minutes or until fish is tender enough to flake easily with a fork
- Serve steaming hot garnished with chopped Parsley
* If Chowder is too thick, it can be thinned a little with a bit of extra milk or water. Just remember to re-season.

This looks interesting. Unfortunately, as you know, I have never been a seafood person. You definitely get your love of seafood from your dad.

You won’t believe this but I’ve been waiting to get a receipe for Clam Chowder and this sounds delicious. First thing tomorrow, I’m trying it.
