Mini Crab Cakes with Garlic and Chive Sauce
These crab cakes are light and airy, but heavy enough to leave you satisfied. Recipe makes 16 crab cakes. For a figure friendlier version, use light mayo and sour cream.
Crab Cake Ingredients:
8 oz of lump crab meat
3 slices of white or wheat bread
1/3 cup of mayonnaise
3 green onions chopped
1 tsp of Old Bay Seasoning
1 tsp of Worcestershire sauce
2 large beaten eggs
¼ tsp salt
16 lemon slices
Vegetable cooking spray
Garlic Chive Sauce Ingredients:
¾ cup of sour cream
1 minced garlic clove
1 Tbsp chopped chives
¾ tsp lemon zest
1 ½ Tbsp fresh lemon juice
¼ tsp salt
¼ tsp pepper
Method:
1. Finely crumble bread slices (food processor works great.)
2. Stir together mayo, green onion, Old Bay, Worcestershire sauce, salt, pepper, and eggs.
3. Stir in bread.
4. Gently fold in lump crab meat.
5. Shape mixture into 16 (2 inch) cakes.
6. Set cakes aside.
7. Stir together all the Garlic Chive Sauce ingredients in a bowl and set aside.
8. Heat a griddle or large non-stick skillet over medium low heat.
9. Spray with cooking spray.
10. Cook crab cakes 4 minutes on each side…till golden brown.
11. Serve with Garlic Chive Sauce and slice of lemon wedge.

These would be delicious for those who eat seafood. I gave up eating any creatures a long time ago.
