A truly delicious recipe.

I enjoy preparing Seafood, it doesn’t take too much time, it is better for you than meat products and it tastes great.  Scrod Cod is a tasty fish and is available in most grocery stores.  Scrod tends to be a bit more expensive than Flounder and other fish; sometimes you may catch a break and find it on sale.

Ingredients

First you will need 2-3 good size slices of Scrod Cod, ½ stick of Butter, 1 Cup Chardonnay Wine, 1 Tablespoon garlic Powder, 1 Teaspoon Black Pepper, 1 Teaspoon of Sea Salt, 1 Teaspoon Old Bay Seasoning, 1 Teaspoon of Dill, and Paprika for decoration.

Method

Pre-heat oven to 325 degrees.  Take fish pieces place in a glass baking dish, you then want to add wine first, followed by Garlic Powder, Salt, Pepper, Dill, you then take ½ stick of Butter and slice in to 4 smaller pieces and place one piece of Butter on top of each of the fish pieces.  Place in oven for 15 minutes; remove from oven sprinkle with Paprika and serve.

You can serve fish with Baked Potatoes, Salad or Noodles Romanoff.

Noodles Romanoff, you will need 1 package of fine Egg Noodles, 1 Cup of Cracker Barrel Sharp Cheddar shredded, ½ stick Butter, 1 Teaspoon Pepper, 1 Teaspoon Salt, ½ Cup of Shredded Monterey Jack Cheese, 1 cup of Light Cream.

Place Butter in medium saucepan on stove, add Cream and stir slowly, then you need to gradually add Cheddar and Monterey Jack and continually stir, do not allow cheese or milk to boil or burn.  When all cheeses are melted add Pepper, and salt, remove from stove place aside and cover with lid.

In separate pot or saucepan bring 3-5 cups of water to boil, you can add 1 Teaspoon of oil to water, add Egg Noodles, follow package directions (normally 3-5 minutes boiling time required), remove from stove drain noodles in colander, take melted cheese & milk mixture and pour entire contents over noodles, mix well.  Finally, place noodles in glass baking dish add about another ½ cup of Cream, place in 350-degree oven for 10 minutes, sprinkle with Bread Crumbs and serve with fish.
