Seafood Roulade

I’m not a big fan of seafood but I loved this.

Ingredients

Roulade

  • 7oz packet frozen leaf spinach (defrosted) or fresh leaf spinach if you prefer
  • 4 eggs
  • 2 tbsp ground almonds
  • 1/2 tsp salt
  • 1/4 tsp nutmeg

Filling

  • 10oz can smoked salmon soup or use your own imaginative filling

Decoration

  • 5 tbsp mayonnaise
  • 2oz fresh peeled or tinned prawns
  • paprika pepper

Method

Line a 13×9″ Swiss-roll tin. Set oven to 375.F/190.C

Press excess water from spinach. Liquidise egg yolks, add spinach, almonds, salt and nutmeg, plus 1 tablespoon of soup filling. Whisk egg whites. Fold into liquidised mixture. Pour into tin and bake for 15 minutes. Turn out and leave for 5 minutes. Remove paper. Spread filling on base. Roll up and leave to cool.

Arrange on a plate and cover with topping and decoration.  Makes a delicious dinner party starter. (can freeze at this stage for up to 1 month).
