Shrimp Jambalaya

Lean and healthy.

Ingredients

  • 1 onion-chopped
  • 1 red pepper-dhopped
  • 1 green pepper-chopped
  • 1 garlic clove-chopped
  • 1 tspoon of paprika
  • 1/4 cayenne pepper
  • 1/2 tspoon oregano
  • 1/2 tspoon of thyme
  • 1 bay leave
  • 1/2 tspoon of salt and pepper
  • 1/2 tomatoe paste
  • 1 can of diced tomatoe
  • 1 can chicken broth
  • 1 cup of rice

Preparation

Saute the first 4 ingredients in a pot with a 1/4 tspoon of olive oil

Add all the rest of the ingredients and let it cook. cover for 20 minutes in medium low heat.

Add the shirmp and cook for 5 minutes.

For garnishment you can chop some parsley n spread on top of your food.
