Shrimp Jambalaya
Lean and healthy.
Ingredients
- 1 onion-chopped
- 1 red pepper-dhopped
- 1 green pepper-chopped
- 1 garlic clove-chopped
- 1 tspoon of paprika
- 1/4 cayenne pepper
- 1/2 tspoon oregano
- 1/2 tspoon of thyme
- 1 bay leave
- 1/2 tspoon of salt and pepper
- 1/2 tomatoe paste
- 1 can of diced tomatoe
- 1 can chicken broth
- 1 cup of rice
Preparation
Saute the first 4 ingredients in a pot with a 1/4 tspoon of olive oil
Add all the rest of the ingredients and let it cook. cover for 20 minutes in medium low heat.
Add the shirmp and cook for 5 minutes.
For garnishment you can chop some parsley n spread on top of your food.
