Soft Shell Crabs with Lime Sauce

I wanted to share this recipe which is a delicious and different way to serve soft shell crabs.

Ingredients:

2 limes ( http://en.wikipedia.org/wiki/Lime_(fruit)

3 eggs

1/4 cup snipped fresh basil leaves

Coarse salt and freshly ground pepper to taste

1 to 2-inch piece fresh ginger

8 ready-to-cook soft shell crabs

Basil leaves for garnish

Procedure:

1. Grate the zest of the limes and set it aside.

2. Squeeze the juice of the limes into a bowl. Beat together the lime juice and the eggs. Cook the egg mixture in the top of a double boiler over simmering water, whisking all time,until it thickens into a sauce. Remove from the heat and add the basil leaves, grated lime zest, salt, and pepper. Keep warm over the heat water.

3.Grate the ginger. Place the crabs side by side in a steamer, place some grated ginger on top of each crab. Steam, covered, for 8 minutes. Serve on individual plates. Garnish with basil leaves and pour some sauce on the side.
