Spicy Fried Prawns

One of the easiest dish. Preparation time is short, about 10 minutes and cooks in 10 minutes.

SPICY FRIED PRAWNS

Ingredients:

300 g large prawns – snip the feelers but leave the shells intact

10 cloves garlic – use the blender to blend till fine

4-6 chillies – pound/blend till fine

6 tbsp cooking oil

1 tbsp oyster sauce

a pinch of sugar

salt to taste

Method:

1. Heat the wok over medium fire. Add in 2 tablespoons cooking oil. When smoking hot, add in the prawns and fry about 3-4 minutes. Remove and set aside on a plate.

2. Add remaining oil to the same wok and the oil gets hot, add in garlic. Stir-fry quickly before adding the chillies. Stir-fry the garlic and chillies for 2-3 minutes. Add in oyster sauce, sugar and salt. Adjust taste.

3. Pour the mixture on the fried prawns. Serve with rice.
