Simple Greek Casserole

You can throw this simple casserole together in minutes. One simple addition can take it from side dish to main dish.

Ingredients

  • 5 small red potatoes
  • 1 medium zucchini
  • 1 carrot
  • 1 small sweet yellow onion
  • few sprigs of chopped dill
  • 3 tbsp olive oil
  • sea salt to taste
  • 1 fresh lime
  • Optional:  shredded pre-cooked chicken
  • Optional:  1/4 cup dry crumbled feta

Method

  1. Slice all veggies thinly
  2. toss veggies (and optional chicken and feta) in a bowl with oil, dill, and salt
  3. spread evenly in baking dish
  4. squeeze lime juice from 1/2 of lime over veggies
  5. cook at 350 for 30 minutes or until potatoes are fully cooked and golden
  6. when done, squeeze juice from 2nd half of lime over the top
