Simple Greek Casserole
You can throw this simple casserole together in minutes. One simple addition can take it from side dish to main dish.
Ingredients
- 5 small red potatoes
- 1 medium zucchini
- 1 carrot
- 1 small sweet yellow onion
- few sprigs of chopped dill
- 3 tbsp olive oil
- sea salt to taste
- 1 fresh lime
- Optional: shredded pre-cooked chicken
- Optional: 1/4 cup dry crumbled feta
Method
- Slice all veggies thinly
- toss veggies (and optional chicken and feta) in a bowl with oil, dill, and salt
- spread evenly in baking dish
- squeeze lime juice from 1/2 of lime over veggies
- cook at 350 for 30 minutes or until potatoes are fully cooked and golden
- when done, squeeze juice from 2nd half of lime over the top
