Simple Recipes for a Low Budget

Simple cooking for anyone who wants to save money.
Here is a recipe for any one who has to live on a low budget and or don’t want to spend hours in the kitchen making expensive fancy food that doesn’t taste after all. This quick meal can be made from left overs.
Cooking time 15-20 minutes.
Spanish Fritatta

Ingredients
- eggs ( use 2 per person)
- potato boiled and cubed
- paprika of any colour, washed and cubed
- onion, peeled, washed and cut in halved strings
- carrot, peeled, washed and grated
- courgette, peeled, washed and grated
- bacon strips
- pepper,
- olive oil
- grated cheese
Method
- I’ve told you already this is going to be easy. Heat a large frying pan. Put the bacon strips in the pan, there is no need to use oil, they have enough oil in them.
- Add the onion, paprika, potato, carrot and pepper, fry for about 15 minutes on medium heat. Add oil if needed.
- Add the courgette and fry for another 5 minutes or so.
- Mix the eggs in a bowl and add them to the mixture in the frying pan. fry until the egg is well done.
- Sprinkle over the grated cheese.
This recipe doesn’t contain salt because there is enough in the cheese and bacon strips.
