Spaghettini a La Prince
Spaghettini a la prince done the Pilipino way.
Spaghettini a la prince
Ingredients:
240 g Spaghettini
20 g unsalted butter
1 tbsp. extra virgin olive oil
1 tbsp. pesto
3 salmon steaks cut approximately ½ cm. thick
50 g turkey or chicken breast (brushed with teriyaki sauce)
3 dcl dry white wine
1 calamansi (calamondin orange)
Spaghettini
Boil water in a cooking pot, add 1 tbsp. of olive oil and a pinch of salt. Cook pasta until al dente. Strain and dip into cold water. Set aside.
Aromatic solution
1. Using low heat, melt the butter together with the olive oil and pesto in a saucepan. Fry chicken breasts is this mixture over low heat. Make sure the pan is covered.
2. Remove chicken breasts. Add the white wine, calamansi (pressed/squeezed), basil, and thyme to the mixture and let it simmer. Cut chicken breast into slices. Set aside.
3.Poach the salmon steaks until cooked (approximately 6 minutes). Remove the salmon steaks and set aside to cool. Remove the skin and bones. Form salmon steaks into large flakes.
4. In a separate pot, boil water and immerse spaghettini for 15 seconds. Remove and strain.
5. Portion onto plates and cover with “a la prince” sauce. Sprinkle with Parmesan cheese. Garnish with a pinch of finely chopped parsley and serve hot.
