Spanish Rice by a Glass Half Full Gal
A delicious spanish rice recipe that can be make in a rice cooker.
2 full measures of parboiled rice (approximately, 12 oz)
two pats of butter
1 Knorr chicken bouillon cube
1 10oz can rotel (or generic diced peppers and tomatoes)
3/4 can of enchilada sauce
12 – 14oz of water
black pepper, salt, comino, chili powder

Measure out the rice and pour into your rice cooker. [You may use brown rice instead of parboiled but it will extend the cooking time and require more liquid.] Pour in the entire can of rotel (do not drain). Next, pour in 3/4 of the can of enchilada sauce. For more flavor and spice you can use the whole can. Add in two pats of butter and bouillon cube. I prefer to break these into pieces and sprinkle around the rice cooker. Shake in a generous amount of comino and chili powder. Salt and pepper to taste.
Pour in water, place lid on rice cooker and press the cook button. Should take about 25 minutes to half an hour to cook. Brown rice takes longer. When the rice cooker is done cooking, stir the rice in a folding method (to not make it too sticky). Serve with beans and something off the grill and enjoy!
