Stuffing
This serves four people, so would do nicely as a small family meal. I feed this to my family and it goes down well so I do recommend it.
Ingredients
- 4-6oz rice
- 3 large tomatoes
- 2 large onions
- salt and pepper (seasoning)
- 3oz butter
- 6oz mushrooms
- 6-8oz grated or diced cheese
- 1-1.5 pints water
Method
Heat half the butter in a pan, fry sliced onions until nearly soft, add skinned sliced tomatoes. Cook for several minutes and add water, bring to the boil, shake in the rice and season well. Cook until rice is tender (approx 15-20 minutes) stir well as mixture thickens. Fry mushrooms in the rest of the butter, mix the cheese into the rice mixture and place on hot dish surrounded with mushrooms.
Note- This meal serves 4 people.
