Summer Sausage Casserole

An easy recipe for breakfast, lunch or dinner. I made it for a pitch in dinner.

Summer sausage is a favorite at our church pitch in dinners so I am always looking for new ways to cook with it. I adapted this recipe to include the summer sausage.


Summer sausage (can be replaced with turkey sausage, beef sausage, or whatever your favorite is)

3 eggs

1.5 cups of milk

1 cup of shredded cheese

3/4 cups of baking mix

In the bottom of a casserole dish (I used glass) cut the summer sausage up into small pieces. Cover with shredded cheese (use your favorite, I used a mexican blend). In a bowl combine eggs, milk and baking mix (I used Bisquick). Once combined, pour over cheese and sausage. Place in a warm oven at 350 degrees for 35 minutes.
