Twice Baked Potato Casserole

The holidays are upon us and many parties have to planned. This recipe is sure to be a crowd pleaser at your next gathering.

Serves 6
Ingredients
- 6 Idaho Potatoes baked
- 1/4 tsp salt
- 1/4 tsp white pepper
- lb cooked crumbled bacon
- 3 cups sour cream
- 2 cups shredded mozzarella
- 2 scallions, chopped
Method
- Cut the baked potatoes into cubes.
- Place half in a greased baking dish.
- Sprinkle with half of the salt, bacon, and pepper.
- Top with half of the mozzarella cheese and sour cream.
- Repeat the steps.
- Bake uncovered at 350 Degrees for 20 minutes until cheese is melted and golden brown.
- Sprinkle with onions.

Now, there you go getting me hungry like that. Some things I love are potatoes and cheese, therefore this is a definite for me. I’m going to make this Friday night, my kids should love it too. Michael
