Twice Baked Potato Casserole

The holidays are upon us and many parties have to planned. This recipe is sure to be a crowd pleaser at your next gathering.

Serves 6

Ingredients

  • 6 Idaho Potatoes baked
  • 1/4 tsp salt
  • 1/4 tsp white pepper
  •  lb cooked crumbled bacon
  • 3 cups sour cream
  • 2 cups shredded mozzarella
  • 2 scallions, chopped

Method

  1. Cut the baked potatoes into cubes.
  2. Place half in a greased  baking dish.
  3. Sprinkle with half of the salt, bacon, and pepper.
  4. Top with half of the mozzarella cheese and sour cream.
  5. Repeat the steps.
  6. Bake uncovered at 350 Degrees for 20 minutes until cheese is melted and golden brown.
  7. Sprinkle with onions.

    Now, there you go getting me hungry like that. Some things I love are potatoes and cheese, therefore this is a definite for me. I’m going to make this Friday night, my kids should love it too. Michael
