Aloo Paratha
These potato-stuffed Indian breads are mouth-watering, lip-smacking delicacies. They are easy to make and taste heavenly.

Every home has a slightly different recipe for Aloo Paratha (also called Parantha), each of which is equally divine. Aloo Paratha is one of my all-time favorites. Here is my recipe for it:
Ingredients
- Wheat flour- 5 cups
- Oil or Butter- sufficient for frying on griddle
- Water- enough to knead dough (Roughly 2 cups)
- Salt to taste
Stuffing
- 3 potatoes (Aloo)- boiled,peeled and mashed
- 1 large onion- finely chopped
- Red chilli powder- 1 teaspoon
- Turmeric powder- 1 teaspoon
- Cumin seeds- 1/2 teaspoon
- Salt to taste
- Oil- 2 tablespoons
Method
a. Heat oil in a deep frying pan.
b. Add cumin seeds and let them splutter.
c. Add onions to this and fry till the onions turn golden brown.
d. Now put in Salt, red chilli powder and turmeric powder and continue frying.
e. Finally add the mashed potatoes into it and fry on low flame till the potatoes mix well with the other ingredients.
f. Remove from flame and keep it aside.
To make Aloo paratha:
a. Add a teaspoon of oil or butter to wheat floor, add salt and water and knead till it becomes semi- soft dough. (Do not make it into a paste!)
b. Divide the dough into small balls about the size of lemon.
c. Use a rolling pin to flatten the balls into a disc like shape. You could sprinkle dry wheat flour to help you in rolling out the balls.
d. Now make a small ball of the potato stuffing and place it on the flattened dough.
e. Fold the dough from all sides such that it envelops the stuffing and looks like a stuffed ball.
f. Now roll out the ball into a disc shape again.
g. Heat the griddle (what we call “tava” in India).
h. Place the disc-shaped uncooked Aloo paratha on it and cook it on low flame for around 20 seconds.
i. Flip it over and apply oil even on the cooked side.
j. Again flip it and apply oil on the other side.
k. Cook till both the sides turn golden brown in color and the paratha has become crisp.
Your Aloo paratha is ready. You can garnish it with chopped coriander leaves it you want. Enjoy it hot with pickle and yogurt/curd.
